<li>First of all preheat oven to 200 degrees F.</li>
<li>In a large mixing bowl beat egg whites, cream of tartar, peppermint extract, and salt with an electric mixer on medium speed until soft peaks form (tips curl). Gradually add sugar, about 1 tablespoon at a time, beating on high speed until stiff peaks form (tips stand straight).</li>
<li>Using a new small paintbrush, brush stripes of red food coloring on the inside of a decorating bag fitted with a 1/2-inch open-star tip. Carefully spoon egg white mixture into decorating bag. Pipe 2-inch stars 1 inch apart onto the prepared cookie sheet.</li>
<li>Bake about 1-1/2 hours or until meringues appear dry and are firm when lightly touched. Transfer cookies to a wire rack; cool.</li>

butter on one, then place together like a sandwich. Continue the process until
all crackers are used up. While putting crackers together begin to melt the
bags of chocolate chips and bar of wax in a double boiler (use more wax if
chocolate is too thick). After chocolate has completely melted begin dipping
cracker sandwiches into the chocolate at least a couple of times. Use your
plastic dipping tool or fork to lift the coated crackers out of the chocolate.
Let the excess chocolate drip off, and then place on one of the opened mini
baking cups. Let the dipped crackers dry for a few minutes and then refrigerate
until you are ready to use. They will keep for 6 months or more, if kept
frozen. They make great party foods and great gifts, plus they taste really
good too!<o:p></o:p></span></div>

definitely use two sheets of wax paper or parchment paper if you prefer — or if
that’s all you have. Rolling the dough between the papers keeps the dough very
smooth, preventing marks from the rolling pin (and not sticking to it either!).
The reason Toni uses one of each is “I like the flexibility of the wax
paper on top and I like the parchment paper on bottom because it’s heavier, and
if I am cutting a difficult shape I can bake right on the paper that it was cut
on after removing excess dough.”<o:p></o:p></span></div>

first lays her ball of dough down, she uses her hands to push it flat. Then she
lays her wax paper over it, and uses her rolling pin to roll it out smooth.<o:p></o:p></span></div>

cookies! Once the dough is rolled out, you can use cookie cutters to cut out
the shapes. If the cookies are sticking in the cutter, you can lightly dust it
with flour to help. The cookies will usually stay right in the dough where you
cut them. Once you’re done cutting all the cookies, tear away the excess dough.
Then you can gently lift the cookies by pulling up the edge of the parchment
paper and gently transferring the cookie from the paper to your lined baking
sheet by hand. Another way of doing this is simply cutting the shapes out on
the same surface they will bake. Just remove the excess dough around each shape
and bake right on the sheet. This keeps the cookies from stretching, but it
limits the amount of dough you can use the first round. And the less times a
dough has been rolled the better. So unless you’re cutting a really delicate
cookie, it’s usually best to carefully transfer them.</span><o:p></o:p></div>

cookies) into the freezer for about 2-4 minutes, depending on the size. This
helps the cookies keep their shape. Once they have chilled for a few minutes,
pop them in the oven. Baking times really really depend on size of cookie. The
cookies pictured were about 2.5 inches and baked perfectly at 7 minutes. Turn
your oven light on and set the timer for six minutes. Check them at six
minutes, and proceed to add a minute or two as needed. If you like your
cookies super soft, pull them out right when you notice the very “moist look”
of the dough is gone on top or if you notice the bottom turning golden brown at
all. Toni says she’s a “burn-a-phob” causing her to yank them out of the oven
when they’re just baked.</span><o:p></o:p></div>

them sit on the warm pan for a minute or two. This gives them a minute to firm

helps a ton to pull them off while they’re still on the parchment paper. Using
a spatula can squish or even break them.</span><o:p></o:p></div>

<li>39 Oreos, divided (Orignal NOT Doublestuff. This is one
entire 15.5 oz pkg)</li>
<li>1 (8 oz) pkg cream cheese, softened</li>
<li>16 oz. vanilla almond bark or candy melts</li>

<span style="font-size: large;"><b>Directions:</b></span></div>
<div class="MsoNormal" style="text-align: left;">
Set a long sheet of wax paper over a cookie sheet, set
aside. Place 36 Oreos in a food processor (entire cookie, DON'T remove cream
filling) and pulse until finely crushed (alternately if you don't own a food
processor you can place Oreos in a large Ziploc bag, seal bag and crush with a
rolling pin until finely crushed). Pour crushed Oreos into a mixing bowl along
with cream cheese and using a the back of a spoon, stir mixture while pressing
it along the bottom of the bowl, until well combine and evenly moistened. Scoop
mixture out and form into 1 inch balls (if you happen to have a kitchen scale,
the should be about 16 grams each) then align on prepared cookie sheet. Place
truffles in freezer for 10 minutes. Meanwhile crush remaining 3 Oreos.<br />

Melt almond bark according to directions on package. Remove
truffles from freezer and dip in melted chocolate and evenly coat then allow
excess chocolate to run off (I barely made it with 16 oz. of the melted bark
but you may need a little more). Return to baking sheet, immediately sprinkle
tops with remaining crushed Oreos then allow chocolate to set. Store in an
airtight container in refrigerator.</div>

with royal icing to the backs of the cookies. I usually insert the sticks into
the cookie (dough) before baking, but I retrieved these from the freezer,
already baked..</div>
